Stir Fry Bean Sprout (豆芽)

Ingredients

 

  1. Bean Sprout
  2. 2 clove of garlic (smashed, chop, or minced)
  3. 1/5 cup water
  4. ½ teaspoon salt
  5. 1 stalk spring onion
  6. small pieces of fried salted fish (optional) – best to use salted fish from threadfin (午鱼) (mai yao in Cantonese) Vegetarian dish without this item.
  7. 1 chinese table spoon cooking oil

  Method 

  1. Wash the spring onion and chop into strips of 3 cm.
  2. Wash the bean sprout, and remove the shell of the beans, and remove the root (or tail)
  3. Cut the salted fish into small slices, and fry them in oil separately till fragrance. Keep aside for use. (you can prepare this in advance and keep in an air tight jar.
  4. Heat the wok, put in oil, and garlic.  Fry till fragrance and lightly browned.
  5. Add in bean sprout, stir fry for 2 mins.  Add water and salt, stir for another 30 secs to 1 min. 
  6. Off the flame, and add spring onion, and salted fish, stir and serve.
  7. Serve hot.
