Fried Potato in Sweet and Sour Sauce

This is a simple dish that kids will love it.

Ingredients

  1. 3  table spoon of tomato ketchup
  2. 1 table spoon of sugar
  3. 1 table spoon of soya sauce
  4. 1/8 teaspoon of salt
  5. 1/2 teaspoon corn flour
  6. 3 tablespoon water
  7. 2 clove garlic minced
  8. 2 tablespoon cooking oil
  9. 3 big Potato
  10. cooking oil for deep frying

Method

  1. Peel the potato and cut away the eyes.  Slice it or cut into strips or slices. Wash it to remove the starch and drain dry (dab with kitchen towels)
  2. Deep fry in medium heat till golden brown
  3. Mixed ingredient 1 to 6 in a bowl.  (tip, add the flour last, and after adding, leave it to sink into the water before stirring, and this will avoid the lumpy flour effect)
  4. Heat up a sauce pan or wok or frying pan, add oil and garlic, stir fry till fragrant and lightly brown.
  5. Add in the mixture and bring to boil, allow it to bubble vigorously.
  6. Add in pre-fried potato and stir until evenly coated with the sauce (there should little gravy left at the bottom as most of it should be coating the potato)
  7. Serve Hot.  Suitable for vegetarian.

    can i skip the deep frying part? instead just cook in sauce

    Cannot. You need to deep fry first to cook the potato, while having a crust outside to keep the starch inside while you mix it with the sauce. The mixing with the sauce in the last step only takes 2-3 mins, it is not sufficient to cook the potato.

    i mean cook the potato 1st then cook the sauce then mix altogether

    Yes you can, but I’m just wondering, might not be a good idea to “mix” them as potato cook in other way does not hold together that well and may smash up while mixing. Are you thinking of oven bake the potato?
