Dice potatoes with minced pork
- 200 grams minced pork (optional)
- 1 tomato
- 3 large potatoes
- 1 stock of Chinese parsley
- 1-2 bulbs of garlic
- 2 teaspoon sugar
- 1 Chinese table spoon light soya sauce
- ½ teaspoon salt
- ½ cup water
- 3 Chinese tablespoon cooking oil
- oil for deep frying.
Method
- Peel the potatoes, nice it into cubes of about 1cm cubes. Rinse away the starch, drain and leave it to dry while you prepare other things.
- Cut up the tomato into 4-5 pieces.
- Wash and cut the parsley into roughly 1-2 cm long.
- Peel and smash the garlic, or cut into small pieces.
- Deep fry the potatoes cube till very lightly brown (not brown, we are not making chips here), remove from oil and drain.
- Heat up the cooking pan.
- Put in the 3 tablespoon of cooking oil, and garlic. Stir till lightly brown and frangrance.
- Add in minced pork, keep pressing and stirring to break up the pork so that it don’t stick into a big lumps or become a patty. You have to do this quick before the pork is cooked.
- Once the pork is cooked, add in the potatoes and tomato, water, sugar, soya sauce, salt. Cover with lid for 10 mins
- Remove lid, add in parsley and serve.
- Goes very well with steam rice.
