Hairy Gourd Soup

Ingredients

  1. 200 grams lean pork
  2. 1 hairy gourd
  3. 1 litre Stock, or water with stock cubes
  4. Dash of ground white pepper
  5. 1 stock of spring onion.
  6. 1 teaspoon salt

Method

  1. Using a knife, do a scraping motion to scrape off the skin of the hairy gourd.  The more you scrape, the deeper you get, but I like it just slightly below the surface, ie the end product is still light green in colour and not totally white, which is the colour of the flesh of the gourd.
  2. Cut it up like cutting up a wooden log for fire wood, ie to get pieces shapes like little domino about 2cmx4cm with ½ cm thickness.
  3. Slice the lean pork into thin slices.
  4. Cut the spring onion into small pieces.
  5. Bring the stock to boil, add in hairy gourd and simmer for about 15 minutes till soft.
  6. Add in pork and salt to taste, and boil for 1-2 mins. 
  7. Remove from fire, add pepper and spring onion.
