Spaghetti in Chicken Soup
This is quite a simple meal, especially good as a toddlers’ or children’s meal.
Ingredients (serve 2)
- 4 stalks of celery
- 2 carrots
- 1 big yellow onion
- 2 potatoes
- 1 chicken breast meat
- 1 chicken bone (only the backbone and the rib bones left, after all the parts has been cut out and sold separately, you get this for less than S$1 here)
- 3-4 cups water
- Salt
- small handful Spaghetti (note, it will expand 4 times in volume)
Method
- Boil the spaghetti till soft, and drain dry. Optional (for children), using scissors, cut into short sections (about 3 cm)
- Peel and dice the potatoes into small cubes of 1 cm. Dice 1 of the celery into small cubes of ½ cm.
- Wash and drain dry the chicken breast. Rub with some ½ teaspoon salt.
- Pan fry the chicken breast till brown and just cooked. (about 10 mins). When done, leave to cool and cut into slices.
- Wash and cut the remaining of the celery into sections that can fit into a pot. Remove the skin of the carrot. Remove the skin of the onion and cut into chucks. Wash the chicken bone.
- Put all into a pot with 3-4 cups water, and allow to boil. When boil, simmer for 20 mins to get the chicken vegetable stock.
- Remove the all the ingredients from the soup. Discard away the onion, celery and chicken bone. Dice the carrots into cubes of ½ cm. Put it back into the soup, and together with the diced potato and celery, let it simmer for another 20 mins until the potato is soft.
- Add in chicken breast and salt to taste.
- Lastly add in the spaghetti and allow to boil for 1 mins.
- Serve.
