How to cook soft porridge base for Toddler with Ginger and Shallots
I repeat this recipe with option of adding some ginger and shallots. Learn from my in laws that adding this is good to improve the immune system of the toddler so that they do not catch a cold easily.
Ingredients (for 1 serving)
- 1 handful of white rice (or about 1/8 cup using the measuring cup from rice cooker)
- 1 bowl boiling hot water
- 1/8 of a shallot
- small bit of ginger (aprox ½ cm size)
Method
- Wash rice thoroughly, at least 4-5 times (you don’t want to have your baby to consume any chemicals or dirt)
- Peel the shallots, and cut off 1/8 of it (you just need a little of it)
- Scrap off the skin of ginger and cut a small bit if it about ½ cm. Smash it with the side of your knife.
- Put rice into slow cooker, add in 1 bowl boiling hot water. Add in the shallot and ginger, leaving them floating on top. Let it cook under “High” for 1-1.5 hours until you can see the rice grains has bloated up very big. (if possible look through the glass cover, as opening it release the heat and slow down cooking). Remove and discard the ginger and shallots (will still be on top)
- Using a metal spoon, stir in big circular motion, the rice will get smashed up easily into a creamy paste (with a little lumps is ok), and you are ready for adding other ingredients.
