Stir Fry Pork Slices with Sze chuan preserved vegetables (榨菜 or 四川菜)

 Ingredients

  1. 200 grams lean pork, sliced
  2. 1 bulb of sze chuan vegetables (about size of a big egg)
  3. 2 clove of garlic, minced.
  4. 1 small fresh chilli
  5. 2 chinese table spoon of light soy sauce
  6. 3 teaspoon sugar
  7. ½ teaspoon salt
  8. ½ cup water
  9. 3 chinese table spoon of oil.
  10. ½ teaspoon corn flour.

Method

  1. Wash and sliced the lean pork into thin slices of about 3mm thick (approximately).  Mixed in corn flour to get a very thin flour.  You will not be able to see the pork turn flour white, but the thin layer when cook give the pork a smoother texture.
  2. Peel and minced the garlic.  Wash and sliced the sze chuan vegetable into thin slice about 1-2mm thick.  Split the chilli, remove the seed, and cut into small pieces.
  3. Heat wok, and put in the oil and garlic and chilli, fry till fragrance.
  4. Add in pork and stir fry immediate before it sticks to the pan or together. 
  5. Add in the sze chuan vegetables and water, soy sauce, sugar, and cover to simmer in low heat for 5 mins.
  6. Serve hot.
