{"id":283,"date":"2012-12-28T10:34:54","date_gmt":"2012-12-28T02:34:54","guid":{"rendered":"http:\/\/werynice.com\/home\/?p=283"},"modified":"2012-12-28T10:34:54","modified_gmt":"2012-12-28T02:34:54","slug":"braised-bean-curd-with-minced-pork-or-chicken-%e7%ba%a2%e7%83%a7%e8%b1%86%e8%85%90","status":"publish","type":"post","link":"https:\/\/werynice.com\/home\/?p=283","title":{"rendered":"Braised Bean Curd with Minced Pork or Chicken (\u7ea2\u70e7\u8c46\u8150)"},"content":{"rendered":"<p>This can be made vegetarian by replacing meat with mushrooms, and using vegetarian oyster sauce or mushroom sauce.<\/p>\n<p><strong>Ingredients <\/strong><\/p>\n<ol type=\"1\">\n<li>1 block soft bean curd<\/li>\n<li>150g-200g minced pork or chicken<\/li>\n<li>2 clove of garlic<\/li>\n<li>\u00bd tablespoon dark soya (optional)<\/li>\n<li>1 \u00bd tablespoon light soya<\/li>\n<li>1 \u00bd tablespoon oyster sauce or mushroom sauce<\/li>\n<li>\u00bd tablespoon sugar<\/li>\n<li>\u00bd cup water<\/li>\n<li>2 tablespoon cooking oil<\/li>\n<li>\u00bd cup water<\/li>\n<li>1 teaspoon corn flour<\/li>\n<\/ol>\n<p>I personally like to use the organic tofu (bean curd) of the brand &#8220;Unicurd&#8221;.\u00a0 It is really nice and soft. (see <a href=\"http:\/\/www.unicurd.com.sg\/product_OrganicTofu.asp\">http:\/\/www.unicurd.com.sg\/product_OrganicTofu.asp<\/a>).\u00a0 Mushroom sauce taste like oyster sauce and usually the bottle will call it vegetarian oyster sauce.\u00a0 There are 3 methods to cook this, and I personally like the 1st, less messy kitchen as frying tofu usually get oil splashing.<\/p>\n<p><strong>Method 1<\/strong><\/p>\n<ol type=\"1\">\n<li>Mix soya sauce and oyster sauce, sugar, water in a cup or bowl with \u00bd cup water.\u00a0 Add in corn flour and dissolve.\u00a0 (The trick to prevent the flour forming lumps is allowing the flour to slowly get wet and sink to the bottom, then start stirring).<\/li>\n<li>Peel and chop the garlic.\u00a0 Cut the soft tofu into smaller cubes of about 1 inch by 1 inch approximately.<\/li>\n<li>Heat up frying pan, wok, or a shallow pot.\u00a0 Add oil.<\/li>\n<li>Add garlic and fry till fragrant.\u00a0 Add in minced meat and keep pressing and stirring till it cooks and breaks into small pieces. Fry till the moisture is dried up and pour in the gravy.\u00a0 Cooks till thickens.<\/li>\n<li>Add in the tofu and allow it to boil for 3 mins. Do not stir too much as it breaks the tofu.\u00a0\u00a0<\/li>\n<li>Serve hot.<\/li>\n<\/ol>\n<p><strong>Method 2 <\/strong><\/p>\n<ol type=\"1\">\n<li>Exactly same as Method 1, except between step 3 and step 4, add in the following step.<\/li>\n<li>Add oil and heat up till very hot.\u00a0 Slowly slide in the tofu and allow it to fry the surface.\u00a0 Don&#8217;t need to fry all surface, just get some surface scalded brown to get some fragrant of fried tofu.\u00a0 Do not to stir it too hard as it breaks the tofu. Push tofu to a side to scoop into a plate.\u00a0<\/li>\n<li>Method 1 step 4 continues.<\/li>\n<\/ol>\n<p><strong>Method 3<\/strong><\/p>\n<ol type=\"1\">\n<li>Exactly same as Method 1, except deep fry the tofu till golden brown on the outside, hence leaving a layer of skin (which is fried tofu) wrapping the tofu.\u00a0 To do this, the oil has to be very hot.<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>This can be made vegetarian by replacing meat with mushrooms, and using vegetarian oyster sauce or mushroom sauce.
