{"id":129,"date":"2008-10-06T20:48:27","date_gmt":"2008-10-06T12:48:27","guid":{"rendered":"http:\/\/werynice.com\/home\/?p=129"},"modified":"2008-10-06T20:48:27","modified_gmt":"2008-10-06T12:48:27","slug":"braised-minced-pork-with-preserved-vegetables%e5%86%ac%e8%8f%9c","status":"publish","type":"post","link":"https:\/\/werynice.com\/home\/?p=129","title":{"rendered":"Braised minced pork with preserved vegetables(\u51ac\u83dc)"},"content":{"rendered":"<p><a href=\"http:\/\/werynice.com\/home\/wp-content\/uploads\/braised-minced-pork.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-130\" title=\"braised-minced-pork\" src=\"http:\/\/werynice.com\/home\/wp-content\/uploads\/braised-minced-pork.jpg\" alt=\"braised-minced-pork\" width=\"400\" srcset=\"https:\/\/werynice.com\/home\/wp-content\/uploads\/braised-minced-pork.jpg 845w, https:\/\/werynice.com\/home\/wp-content\/uploads\/braised-minced-pork-300x225.jpg 300w\" sizes=\"auto, (max-width: 845px) 100vw, 845px\" \/><\/a><\/p>\n<p>This is same as the steam version, but we cook it by braising with soya sauce gravy.<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ol type=\"1\">\n<li>250 grams minced lean pork<\/li>\n<li>2 chinese table spoon of preserved vegetable (\u51ac\u83dc)<\/li>\n<li>1 teaspoon corn flour<\/li>\n<li>1 table spoon sesame oil<\/li>\n<li>2 table spoon soy sauce<\/li>\n<li>dash of pepper<\/li>\n<li>\u00bd teaspoon sugar<\/li>\n<\/ol>\n<p>For gravy<\/p>\n<ol type=\"1\">\n<li>2 tablespoon soya sauce<\/li>\n<li>1 tablespoon sugar<\/li>\n<li>1\/2 teaspoon dark soya sauce<\/li>\n<li>\u00be cup water<\/li>\n<li>2 clove of garlic<\/li>\n<li>2 table spoon cooking oil<\/li>\n<\/ol>\n<p><strong>Method<\/strong><\/p>\n<ol type=\"1\">\n<li>Wash the preserved vegetables and press dry.<\/li>\n<li>Either you get ready minced pork, or you can get a piece of lean pork and minced it using your cleaver.\u00a0 (cut into thin slice, and then chop repeatedly for about 5-10 mins.)\u00a0<\/li>\n<li>While still on the chopping board, add in the preserved vegetables and chop again for another 5 mins so that that the vegetables are also chopped finely, and mixed well into the pork.<\/li>\n<li>Mixed in the corn flour, soya sauce, sesame oil, pepper, sugar and mixed well with a spoon or hand. (you can do this in a plate or on the chopping board)<\/li>\n<li>Putting the pork on the chopping board, scoop up the pork with the cleaver in 1 hand and your other bare hand and slap it down gently on the chopping board repeatedly 10-20 times.\u00a0 This will expel the air within the minced pork and will make it more compact and more springy to the bite when cooked.<\/li>\n<li>Spread the pork flat like a patty.<\/li>\n<li>Heat up a frying pan, add in oil and spread the oil out, especially if you are not using non-stick pan.<\/li>\n<li>When hot, put in the patty to pan fry one side of the patty till brown, usually take 8-10 mins (you can pan fry the other side but it is optional)<\/li>\n<li>When almost done with frying, add in chop garlic to fry in the oil.<\/li>\n<li>Mix the sugar, light and dark soya sauces and water in a bowl. Pour the mixture into the pan, and cover for 5 mins to simmer.\u00a0 Open lid, and flip the patty over and cover for another 5 mins to simmer.<\/li>\n<li>\u00a0Serve hot.<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>This is same as the steam version, but we cook it by braising with soya sauce gravy.
