{"id":123,"date":"2008-08-14T21:04:15","date_gmt":"2008-08-14T13:04:15","guid":{"rendered":"http:\/\/werynice.com\/home\/?p=123"},"modified":"2008-08-15T19:29:33","modified_gmt":"2008-08-15T11:29:33","slug":"glutinous-rice-balls-in-ginger-soup-%e6%b1%a4%e5%9c%86%e7%b3%96%e6%b0%b4","status":"publish","type":"post","link":"https:\/\/werynice.com\/home\/?p=123","title":{"rendered":"Glutinous Rice Balls in Ginger Soup (\u6c64\u5706\u7cd6\u6c34)"},"content":{"rendered":"<p>This dessert is usually serve in <a href=\"http:\/\/en.wikipedia.org\/wiki\/Dongzhi_Festival\">Chinese winter festival<\/a> (\u51ac\u81f3) or <a href=\"http:\/\/en.wikipedia.org\/wiki\/Winter_solstice\">winter solstice <\/a>on 22 Dec every year. \u00a0It is also being served during other Chinese festival to indicate togetherness or reunion\u00a0(\u56e2\u5706)<\/p>\n<p>The ginger soup here is the same as the <a href=\"http:\/\/werynice.com\/home\/?p=122\">sweet potato in ginger soup<\/a>.<\/p>\n<p><strong>Ingredients (4 to 8 servings) <\/strong><\/p>\n<ol type=\"1\">\n<li>500 grams Glutinous rice flour. (or you get 2-3 packets of the ready made frozen glutinous rice balls from supermarket, and they comes with fillings too)<\/li>\n<li>1 section of ginger tuber (about 5-10 cm)<\/li>\n<li>Sugar to taste (about 8 table spoon and you adjust accordingly)<\/li>\n<li>5 bowls water for the soup<\/li>\n<li>2 or 3 pandan leaves<\/li>\n<li>Plain water for making the dough<\/li>\n<li>A pot of water for boiling the rice balls<\/li>\n<li>Optional: <a href=\"http:\/\/werynice.com\/home\/?p=117\">crush peanuts <\/a>mixed with sugar (3:1 ratio)<\/li>\n<\/ol>\n<p><strong>Method<\/strong><\/p>\n<ol type=\"1\">\n<li>Wash the ginger, and smash it slightly with a handle of a cleaver or chopping knife or anything hard.<\/li>\n<li>Put water in the pot and ginger.<\/li>\n<li>Boil for about 20 &#8211; 30 minutes<\/li>\n<li>Add sugar to taste and stir.<\/li>\n<li>Add in pandan leaves and boil for another 1-2 minute, and turn off fire.<\/li>\n<li>If using ready made rice balls, skip this step.\u00a0 Put the flour in a big mixing bowl, slowly add plain water and knead into dough.\u00a0 Put the dough on a cleaned table top, and knead till smooth.\u00a0 Roll it into a long strip and pinch off bit by bit of about a 2 cm or bigger size.\u00a0 For each of these bit, put into the middle of both palm and roll in circular motion to make small ball.<\/li>\n<li>Boil a pot of plain water.\u00a0 Put in the rice balls and let it continue to boil.\u00a0 They are cooked when they float in the water.<\/li>\n<li>Scoop them into individual serving bowl, and pour ginger soup into the bowl.<\/li>\n<li>Serve immediately.
